Pistachio Dream Cookie Bars are delightful dessert bars combining the nutty flavor of pistachios with the sweetness of sugar cookies. They're easy to make and perfect for any occasion.

Instructions
Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish or line it with parchment paper.
In a large mixing bowl, combine the softened butter, eggs, pistachio instant pudding mix, and sugar cookie mix. Use an electric mixer to blend until a smooth dough forms.
If desired, fold in the chopped pistachios for added texture and flavor.
Press the dough evenly into the prepared baking dish, spreading it to the edges.
Bake in the preheated oven for 20-25 minutes, or until the edges are lightly golden and a toothpick inserted into the center comes out clean.
Remove from the oven and allow to cool completely in the baking dish.
Once cooled, cut into bars and serve. Enjoy!
Notes
For an extra touch, drizzle melted white chocolate over the cooled bars before serving. Store any leftovers in an airtight container at room temperature for up to 3 days.
