Mexican Shrimp Cocktail

This refreshing and flavorful Mexican shrimp cocktail (Cóctel de Camarón) is the perfect appetizer or light meal. Packed with shrimp, fresh vegetables, and a zesty tomato-based sauce!

Ingredients
  

Shrimp

  • 1 lb shrimp peeled and deveined
  • 4 cups water for boiling shrimp

Cocktail Sauce

  • 1 cup tomato juice
  • 1/2 cup ketchup
  • 1/4 cup lime juice freshly squeezed
  • 1 tbsp hot sauce adjust to taste

Vegetables & Garnishes

  • 1/2 cup red onion finely chopped
  • 1 cup cucumber diced
  • 1 cup tomato diced
  • 1/4 cup cilantro chopped
  • 1 avocado sliced for garnish
  • salt & pepper to taste

Instructions
 

  • Bring water to a boil in a pot. Add shrimp and cook for 2-3 minutes, until pink and opaque. Drain and transfer to an ice bath to cool.
  • In a large bowl, combine tomato juice, ketchup, lime juice, and hot sauce. Stir to mix well.
  • Chop the cooled shrimp into bite-sized pieces (or leave whole if preferred).
  • Add shrimp, red onion, cucumber, tomato, and cilantro to the cocktail sauce. Stir to combine.
  • Season with salt and pepper to taste. Let chill in the refrigerator for 10-15 minutes to allow flavors to blend.
  • Serve in cocktail glasses or bowls, garnished with sliced avocado and extra lime wedges. Enjoy with tortilla chips or saltine crackers!

Notes

For extra flavor, add diced jalapeño or a splash of clam juice. You can also substitute part of the tomato juice with Clamato for a more authentic taste!
