This refreshing and flavorful Mexican shrimp cocktail (Cóctel de Camarón) is the perfect appetizer or light meal. Packed with shrimp, fresh vegetables, and a zesty tomato-based sauce!
Bring water to a boil in a pot. Add shrimp and cook for 2-3 minutes, until pink and opaque. Drain and transfer to an ice bath to cool.
In a large bowl, combine tomato juice, ketchup, lime juice, and hot sauce. Stir to mix well.
Chop the cooled shrimp into bite-sized pieces (or leave whole if preferred).
Add shrimp, red onion, cucumber, tomato, and cilantro to the cocktail sauce. Stir to combine.
Season with salt and pepper to taste. Let chill in the refrigerator for 10-15 minutes to allow flavors to blend.
Serve in cocktail glasses or bowls, garnished with sliced avocado and extra lime wedges. Enjoy with tortilla chips or saltine crackers!
Notes
For extra flavor, add diced jalapeño or a splash of clam juice. You can also substitute part of the tomato juice with Clamato for a more authentic taste!
