Ingredients:

For the meatloaf:

  • 2 lbs ground beef (85% lean)
  • 1 cup breadcrumbs (plain or Italian)
  • 1/2 cup milk
  • 2 large eggs
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1/4 cup BBQ sauce (your favorite brand)
  • 2 tablespoons honey
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika

For the honey BBQ glaze:

  • 1/2 cup BBQ sauce
  • 3 tablespoons honey
  • 1 tablespoon apple cider vinegar

Instructions:

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or grease a loaf pan.
  2. In a large bowl, mix together the breadcrumbs and milk. Let sit for 2-3 minutes to soften.
  3. Add the ground beef, eggs, onion, garlic, BBQ sauce, honey, Worcestershire sauce, salt, pepper, and paprika. Mix until just combined—avoid overmixing.
  4. Shape the mixture into a loaf on the prepared baking sheet or press into a loaf pan.
  5. In a small bowl, mix the BBQ sauce, honey, and apple cider vinegar. Brush half of the glaze over the top of the meatloaf.
  6. Bake for 45-50 minutes. Brush the remaining glaze on top during the last 10 minutes of baking.
  7. Let the meatloaf rest for 10 minutes before slicing. Serve with mashed potatoes and steamed vegetables for a comforting meal.

Tips for a Perfect Meatloaf:

  • Don’t overmix the meat to keep the texture tender.
  • Use a meat thermometer; the internal temperature should reach 160°F (71°C).
  • Swap ground beef for ground turkey for a leaner version.
  • Let the meatloaf rest after baking to keep it juicy.
