Chocolate Peanut Butter Cups

Ingredients:

For the base:

  • 1 cup crushed graham crackers (or digestive biscuits)
  • 1/4 cup powdered sugar
  • 1/2 cup peanut butter (smooth or crunchy)
  • 3 tablespoons melted butter

For the filling:

  • 1 cup peanut butter (smooth)
  • 1/4 cup powdered sugar
  • 2 tablespoons melted butter
  • 1/2 teaspoon vanilla extract

For the chocolate topping:

  • 1 1/2 cups semi-sweet chocolate chips (or dark chocolate)
  • 2 tablespoons coconut oil or butter

Instructions:

  1. Prepare the base: In a bowl, mix the crushed graham crackers, powdered sugar, peanut butter, and melted butter until combined. Press the mixture into muffin liners or silicone molds, creating an even layer. Place in the freezer to firm up for 15 minutes.
  2. Make the peanut butter filling: In another bowl, mix the peanut butter, powdered sugar, melted butter, and vanilla extract until smooth. Spoon the filling over the chilled base, spreading evenly. Return to the freezer for another 15 minutes.
  3. Prepare the chocolate topping: Melt the chocolate chips with the coconut oil in a heatproof bowl over simmering water (double boiler) or microwave in 30-second intervals, stirring until smooth.
  4. Assemble: Pour the melted chocolate over the peanut butter filling, smoothing the tops with a spoon.
  5. Chill: Place the cups in the fridge for at least 1 hour, or until fully set.
  6. Serve and enjoy: Remove from the molds and enjoy cold or at room temperature.
