Ingredients:

  • 6 large eggs
  • 2 cups shredded hash browns (fresh or frozen, thawed)
  • 1 lb bacon, cooked and crumbled (or turkey bacon)
  • 1 small onion, diced
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Swiss cheese
  • 1 cup cottage cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped parsley (optional for garnish)

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, whisk the eggs. Stir in the hash browns, crumbled bacon, onion, cheddar cheese, Swiss cheese, cottage cheese, salt, and pepper. Mix until well combined.
  3. Pour the mixture into the prepared baking dish and spread evenly.
  4. Bake for 35-40 minutes or until the top is golden brown and the center is set. Insert a knife into the center; it should come out clean.
  5. Let the casserole cool for 5-10 minutes before slicing. Garnish with fresh parsley if desired. Serve warm and enjoy!

Tips for the Perfect Amish Breakfast Casserole:

  • Use pre-shredded hash browns to save time.
  • For a lighter version, substitute turkey bacon and reduced-fat cheese.
  • Make it ahead: Assemble the casserole the night before, cover, and refrigerate. Bake in the morning.
  • Add some heat with chopped jalapeños or a sprinkle of cayenne pepper.
